Charlie's Smokehouse offers five types of smoked fish shipped right to your door.

Pacific Salmon: The Pacific salmon is the driest, most lean fish we offer. With its light pink flesh, and strong sharp flavor, salmon is always a popular choice for party hors d'oevres. Each cut piece ranges in weight from three quarters of a pound to a pound.

Trout: A stronger, "fishier" flavored smoked fish, the lean lake trout has a moist, firm textured flesh. Like our other larger fish, each trout is cut into pieces which generally weight about three quarters of a pound.

Atlantic Salmon fillets: Boneless deep pink Salmon. Very moist, and can be cut thin. Each piece weighs 8 - 14 oz.

Whitefish: Like the chubs, the whitefish has a mild, "non-fishy" taste. The flesh of the whitefish has a firm and moist texture. Each fish is cut into two or three pieces with the tail section weighing about a pound and the middle pieces about three quarters of a pound.

In 1932, Roy Voight opened up his smokehouse, on the Gills Rock dock, at the tip of Door County. With a cigar box for a cash register, he and his wife Caroline sold their smoked chubs to summer visitors of this small fishing community.

Roy's son Charlie had worked alongside his father, and upon Roy's death in 1974, Charlie and wife Bonnie began running the smokehouse. Over the years, locally caught whitefish, as well as trout and salmon, were added to the product offerings.

In 1984, it was decided that the smokehouse would begin staying open on weekends throughout the winter, and to also begin shipping fish. From this decision, a particular problem arose: the business needed a name. Prior to this people has always said, "Go up to Roy Voight's Smokehouse," or, more recently, to "Charlie's Smokehouse." The name stuck, the store that had no name for fifty years became "Charlie's Smokehouse."

In the fall of 1988, "Charlie's" moved off the dock, to its present location, on the top of the hill in Gills Rock. Charlie and Bonnie still run the store, with the help of their son Chris and his wife Jill.

While some things have changed since the beginning, one thing has remained the same: the Voight family still maintains the same tradition of providing the freshest smoked fish to its customers, smoked using the same method Roy did in 1932.
